Made from high altitude Java sugarcane grown grown on the steep slopes of Santa Maria Tlalixtac, Oaxaca, this rum in unaged. Bottled at cask strength, without any added water, it fermented in pine tanks for 25 days, and was distilled on copper pot stills. Savory aromas of pickled capers, olives, tomatillo, along with herbal and grilled pineapple aromas make for a complex expression. This is the second edition release.
