From agave, chile, spices and fruits and flowers you get notes of caramelized pineapple, ancho chile, cloves, cracked pepper, cinnamon, lavender and hibiscus flowers. Brilliant on its own as a spritz with sparkling water and a twist and immensely mixable.

Xila is one of my all time favorite aperitivos, so I was excited to welcome it here to Astor! A mezcal-based aperitivo made in Mexico, Xila is women-founded and women run (the name comes from the Zapotec term for ‘woman’). Xila is created with agave Espadín and seven hand-harvested notes including caramelized pineapple, hibiscus, and ancho chile. It delivers on its promise of a “spicy-rico” flavor— fruity, rich, and a hint of spice on the finish. Never too sweet (or too spicy) and amazing in its own or as an addition to a variety of cocktails. I love it on the rocks or with soda water, but I always reach for Xila to add something special to cocktails I experiment with. Recently, Xila has been a staple at my house for spicy passionfruit margaritas and espresso martinis inspired by the chili spices in Mexican hot chocolate.
