The No.9 series in the range of super premium tequilas denotes a the higher bottling proof, reserved exclusively for batches that are showcasing extra complexity when they've been selected for bottling. We chose this single barrel in particular for its emphasis on the standard bottling style that aficionados of this brand cannot get enough of, just more elevated and distinctive. The extra mature agaves for this batch were cooked very slow and low in an autoclave, open air fermented and aged for 15 months in medium charred American Oak casks. Proofed with the near mythical proprietary water source from wild and remote Navichi Springs. Showing dynamic balance of flavors with an equal split of nectar like cooked agave, savoury baking spices and fresh caramel it is unmistakable from the first sip this could only be Cazcanes.
