Patrick de Montal, the visionary proprietor of this ancient and regal domaine is used to being uncompromisingly first when it comes to his endeavours. First created in 1985 as a means to understand the quality of their terroir and painstaking labors around organic agriculture - he distilled a batch of eau de vie from his estate grown grapes to taste the purity. What he created and what persists to this day is one of the world's best eau de vies. Able to be enjoyed chilled in tiny sips on its own like a great agave spirit for an aperitif or end of mean it also mixes well into countless potential cocktails. You can also think of it as essentially the best and purest vodka you've ever had except with a ton more character and flavor.
