A sparkling wine made in the Pét-Nat style by finishing fermentation in bottle. Made from the local white grape, Grechetto and fermented with native yeast. The vines come from the center of Italy, from Umbria, from the Di Filippo winery - a 30 hectare estate that overlooks Assisi. Pair with a prosciutto panini.
