Great question - The Neeley family's use of wild yeasts and a sweet mash coupled with the 5yrs aging in oak barrels crafted from staves naturally air and weather seasoned for a minimum of 24 months and finally with the extra 2yrs finishing in even rare new charred French Oak casks. Extremely limited and very special indeed.
