This unfiltered white wine takes its name from the vineyard, which once belonged to the local postman (postino). The Trebbiano is pressed whole-cluster using a vertical press and left on the skins overnight; only the free-run must is used. Steel tank and old barrique (Beaufort from Champagne) are used for fermentation and aging.

Abruzzi

Situated on the eastern calf of the Italian boot, Abruzzi is one of the most prolific wine-growing regions in Italy. Two-thirds mountains and one-third hills, it boasts highly favorable natural conditions for the cultivation of grapes. Abruzzi is most famous for its beautiful expressions of the red Montepulciano and the white Trebbiano, though many winemakers are now beginning to experiment with other grape varietals as well.

Flor

Flor is a protective layer of naturally occurring yeast that grows, under certain circumstances, in the barrels after fortification. Its presence (or absence) is what determines the style of a given Sherry. When it does grow, it protects the wine from oxidation while feasting on the available glycerin - the resultant Sherries are thus dry and very pale in color (called Finos or Manzanillas).
