Here's a wine that expands the definition of a traditional French AOC. It's a good example of what makes Tavel so great. Instead of being a more common clear, deep salmon hue, Romain le Bars’ Tavel appears an opaque crimson-purple. It can be mistaken for a fresh, light red. The nose is assertive with cherries, watermelon, cough drops, and blue Italian ice. There's some dried herbs and a touch of balsamic on the palate. It has great, fresh acidity along with a substantial mouthfeel. Once opened and poured, there is a trace of residual CO2 that gives the palate a nice little tingle. Romain practices organic farming and natural winemaking. Great with “Romain” lettuce (get it?).
