Another mind-expanding expression from this cutting-edge rising star based just outside of Tokyo. As the name suggests, the focus here is on roots, all on a spectrum of bitterness and all with their own highly distinguished flavor profiles. As always the sourcing here is local and meticulous. Some of the ingredients include angelica, licorice, Chinese artichoke, chicory, fresh bergamot, Black cumin, and more. The spirit starts warm and sweet and lingers with a bitter leaning finish. It feels like real life magic in amaro form. 100% natural production.

Tatsuya “Moto” Motonaga created the Scarlet project out of a deep passion for Amaro. Born in Osaka, Tatsuya worked in some of the most innovative bars in Japan before embarking on his journey to create this truly artisanal Amaro. He then visited over 70 distilleries in Europe who had centuries of history crafting botanical spirits to see what he could learn. Ultimately, these centuries worth of invaluable knowledge have inspired this bottle, a masterpiece of a liquid. Most of the 30 botanicals used are estate grown at a farm located next to the Iseya Distillery in Sagamihara, Japan, farmed without any chemical use. Bergamot, black cumin, chicory, and even cacao are just some of the ingredients used. A kaleidoscope of an Amaro, this bottle combines the familiar comfort of fond memories with something totally new.
