Often times when sashimi night arrives I gravitate towards a dry & crisp Saké or a mineral driven white wine such as Chablis or Albariño. It would be amazing if we could find this style of wine within the country producing such great seafood, especially if that wine was made from a native grape to the island. Finally, our requests have been answered! The Koshu grape which makes up this wine has been farmed by the Aruga family in Yamanashi since 1937, and combines the subtle elements we look for when pairing with salmon and tuna. Yamanashi is the known as the "fruit kingdom" of Japan, and is located right next to Mt. Fuji. Citrus, Peach, and Jasmine notes are all present in this wine and perform well at low alcohol, combining together to create an incredible value within the Japanese wine scene. Bring on the Omega-3s!
