This husband and wife team - Gautier and Sophie - carry on this family's legacy of a tradition that used to be pervasive in Burgundy, the wine maker/ distiller. Guillemot-Michel is actually the last remaining independent vestige of this rich history in the region. Pioneers in biodynamic farming and winemaking for over 30yrs, each gin is made from their own estate grown grapes, fruits and botanical. The flavors of this rare release are centered around seasonal citrus and wild foraged botanicals near the estate in southern Burgundy. The spirity still strength profile really brings forward the herbal. woodsy and spicy notes that are an excellent foil for the bright citrus notes.
