Ripasso Valpolicella is made with the pressed skins of the partially dried grapes used to produce Amarone. After pressing, the Valpolicella is macerated with these rich skins, imparting some of the texture, aroma, and deep color. Pair this medium-bodied red with fegato alla Veneziana.
