This tiny independent distiller tucked away on the outskirts of Hanoi continues to show the way forward in the pursuit of making spirits of place, forged by local ancestral knowledge for contemporary palates. This unbelievable, genre bending, amaro is made in collaboration with local Medicine Woman Ly Lo May, and is itself a variation of traditional Vietnamese Red Dac bitters. The emphasis is dry, bitter ingredient driven flavors with a profile that is driven by umami with stand-out notes of smoke, pine, poppy and sweet herbs.

I love Italian amari, but too many makers pay lip service to herbal and bitter flavors but under deliver. So if you’re in the mood for an amaro that overdelivers, look no further than May Amaro Bitters. This limited release is a collaboration between Song Cai Distillery, located on the outskirts of Hanoi, and Lý M? M?y, a traditional medicine woman from the Red Dao tribe. The team starts with fourteen native and foraged heirloom Vietnamese botanicals, including fig, poppy, horehound, angelica root, and dandelion root, which they then macerate in a neutral spirit before sweetening it with honey. The result is something akin to mixing peated scotch with Rhubarbo Zucca: aromas of mint, mesquite smoke, and galangal lead to a palate with notes of sarsaparilla, cacao, and lapsang tea with an exceptionally long, smokey, and earthy finish.
