This tiny independent distiller tucked away on the outskirts of Hanoi continues to show the way forward in the pursuit of making spirits of place, forged by local ancestral knowledge for contemporary palates. This unbelievable, genre bending, amaro is made in collaboration with local Medicine Woman Ly Lo May, and is itself a variation of traditional Vietnamese Red Dac bitters. The emphasis is dry, bitter ingredient driven flavors with a profile that is driven by umami with stand-out notes of smoke, pine, poppy and sweet herbs.

Song Cai is a Vietnamese Distillery known for their Gins, but don't let that take away from the uniquely individualistic feel of this Amaro inspired by a traditional Red Dao medicinal tincture. Utilizing local honey, poppy, angelica root, figs, and both roasted and unroasted dandelion root there is a level of smoky yet bitter herbaceousness that I can only liken to a hybrid of fernet and rabarbaro. At 40% ABV this is screaming to find usage in a nice variation cocktail, but also sits well on its own imparting every aspect I look for in a good amaro. I look forward to further endeavors from Song Cai into alternative styles of liquor, as I have yet to be disappointed by anything with their label on it!
