Founded in 1659, this brewery was founded during Japan's Edo Period, during which sake first began being shipped in large wooden casks. Today they recreate this style known as taru by aging their dry sake in new casks of Yoshino cedar. With an earthy, savory, and slightly spiced aroma, this pairs with yakitori and soba noodles.
