The Chardonnay for this wine comes from the vineyards of Vertus, Villeneuve and Mont Aimé. About 1/3 comes from a perpetual reserve started in 2012. This was vinified in enameled stainless steel, and malolactic was allowed. Aromas of orchard fruit, spice, black tea, and smoke with a medium body. Pair this rich and savory wine with langoustine risotto.

Walk through the vineyards of Pascal Douquet and you'll find underfoot a carpet of green. His vines are host to an entire ecosystem, the whole of which helps keep the individual parts alive and thriving. You'll find neither herbicides nor pesticides and just the barest amounts of copper and sulfur. It's all a reflection of Doquet's belief in making a wine as natural and reflective of the terroir as possible, a wine "sans macquillage." Doquet's domaine, which is in the Blancs-Coteaux just south of Le Mesnil-sur-Oger, has been certified organic since 2010. He vinifies individual parcels mostly based on Chardonnay. This cuvee from a premier cru site is brimming with energy yet maintains a deep undercurrent of texture and richness. A Champagne of singular charm and one man's vision.
