The lieu-dit of Le Mont Aimé is one of Pascal cooler parcels, and the Chardonnay ripens a week later than in his other parcels. Vinified in almost equal parts used oak barrel and enameled stainless steel for 11 months. Aromas of blue fruit and a hint of smoke makes this medium-bodied wine unique. Pair with scallops in brown butter and cheese sauce.
