The cépage is Pinot Noir, Chardonnay, and Meunier, all from vines averaging 50 years-old. Angéline Lassalle comes from a tradition of female winemakers at the estate that has been uninterrupted for decades. Malolactic fermentation is allowed, and this is a richer style of rosé Champagne. This wine sees the addition of 4% of Coteau Rouge, from the old vine Champs Richard. Pair with roast pork with beets and Soumaintrain.

A tremendous Rosé Champagne that gives the Billecart Rosé brut a run for its money. Made by a female winemaker from a line of female winemakers, who grow the grapes as well. Grower Champagne is trendy right now, but this stuff is old school cool. This is Kermit Lynch's favorite champagne, one of only 2 Champagnes his company imports. Pinot Noir dominates the blend here, but this, while richer, is still super crisp and mineral. Four years of lees aging before disgorgement and malo give this a luscious texture without any oak at all. Just a dream of a Champagne.
