I have had the privilege of meeting and tasting with Philippe Pacalet a few times now. There are few wine makers I can think of that truly embody the wines in glass quite like Pacalet. No nonsense, and so very engaged. Truly passionate about his wines; But never too serious, and never austere. Phillipe is the nephew of Marcel Lapierre, often regarded as the father of "minimal intervention" / natural wine. In most cases Philippe does not own his vines; he leases them and manages them organically, which allows him to pick the very best plots. Ladoix is one of the hidden gems of the Cote de Beaune, sitting at the foot of the hill of Corton. Salty, flinty, and bursting with Meyer lemon and orchard fruit. This glass of Chardonnay has a raw, living energy that you just don't find in other producers.
