An off-dry Chenin Blanc with just a touch of residual sugar. A small amount of the grapes were affected by botrytis which enhances the aromatics and texture of this fantastic white. Aromas of stone fruits, wet stones, and a savory quality are gifted to us as this medium-bodied wine. Pair with white fish in chile and scallion sauce.

If you like rich opulence in your white wine, Ludovic Chanson's "Les Pêchers" is a must try. It's made with grapes picked mid-harvest (Chanson likes to run three passes each harvest). He allows some of the bunches to be affected by botrytis, which intensifies the honeyed flavors. Out of the glass you'll see rich, golden color and light syrup viscosity. Flavors of honey-roasted nuts and canned pears in syrup jump out to your nose and palate. A hint of pine seeps into the mid-palate with a cleansing acid finish. Try this with a soft blue like Gorgonzola Dolce. Chanson abandoned his career in pharmaceuticals to work the estates of various vignerons in Vouvray and Montlouis. In 2009, he was able to purchase his vineyard, which was already practicing organic. The soils are mostly clay above a bedrock of limestone and hold 40-year-old vines.
