After a whole-cluster, ten day, natural fermentation, the wine was aged in cement vats before bottling unfiltered. Production is miniscule at the estate and Sylvain Martel recently relocated to the area after meeting his vigneronne wife, Anne Sophie Dubois. Enjoy with chicken brochettes.

Sylvain Martel trained as a winemaker in the southern Rhône before he moved to Beaujolais where he bought old Gamay vines at an altitude of 450 meters - a high elevation for grape growing. The yields are kept low and organic viticulture is practiced. After semi-carbonic fermentation is made, the wine is aged for nine months in old barrels. It's an elegant wine that shows depth and concentration. You can taste red berries, red apples crushed peppers followed by a vibrant minerality. The classic qualities of a good, well-made Beaujolais! To be paired with grilled chicken or lightly- sauced pastas or you can just enjoy it by itself with its freshness.
