From vines planted in 1956 comes this formidable red Burgundy that you can drink with abandon. The soils are a combination of clay and limestone and the fruit was partially fermented whole cluster with indigenous yeasts. The wine aged in barrel for a year before bottling.

Who is Sylvain Pataille? One of the most important winemakers in Burgundy today. On the cutting edge of biodynamic farming, he practices ultra-low yields with no synthetic pesticides and ploughs by horse (what?!). For vinification, he presses long and slow, uses only indigenous yeast, and adds very little sulfur to his wines. Google him, he’s a very interesting chap who’s been around winemaking since childhood and has grown his operation from one hectare to twenty. How’s the wine? Stunning. It opens with cherry lozenge, black olive, licorice, and a walk around the farm, then slowly performs a crossfade to rich black and blue fruit. Fine tannins and fresh acidity kept me coming back. If you’re in the store looking for something new, I’m taking you right to this one. Pair with shu-mai burgers, fries, lemon-pickle mayo.
