Old vine Chasselas (60%) and Chardonnay spend several weeks on the skins, imparting texture and flavor to this medium-bodied dry white. This comes from the Cerro Negro vineyard which is located 70 meters above sea level and 60 km from the Pacific Ocean. Aromas of citrus, stone fruits, and herbs meld with tannic structure to create a highly quaffable, quirky yet food-friendly orange wine. Pair with mushroom risotto. The Macatho winery was started in 2016 by Macarena del Río and Thomas Parayre.

When you make a wine with a Chasselas/Chardonnay blend, it only makes sense to call it ChaCha. Macarena and Thomas (Macatho) make this blend from handpicked fruit from the Cerro Negro vineyard in Itata. Soils here are primarily volcanic basalt. Farming is organic and the vinification is minimal. The Chard is skin macerated for 30 days, the Chasselas for 20. The wine is dry as can be. It smells of white tea, apples, and yogurt culture. It's a touch tart, a touch nutty, and a touch smoky. It's a wine that will make you realize that Chileans are cool.
