Made from Gohyakumangoku rice polished to 50%, the name Ginrei means white peak. Crafted from local spring water, this Junmai Daiginjo has noted acidity, and a subtle sweetness. It was only pasturized once, and retains complex and subtle aromas. Pair this with braised lotus root, and a sashimi plate.
