The ancient method of making wines sparkling was by finishing the fermentation in bottle. This is also known as a Pétillant Naturel. This is made from the Macabeo grape variety, is slightly cloudy visibly from the spent lees, and is nothing short of scrumptious on the palate with aromas of quince and a giving nature.

Here is no run-of-the-mill Pet-Nat, but rather an homage to the traditional Catalonian wines made decades ago by the grandparents of the estate's current generation of winegrowers. Mas Goma works organically and biodynamically with 70-year old Macabeu vines - one of the primary grapes Cava is made from - on their 22 hectare estate in Penedes, about an hour west of Barcelona. Grapes are hand-harvested, spend a few hours on the skins to coax out more flavor, and finish fermenting in the bottle, where the wines age for 6 months before manual disgorgement of the spent lees. The result is bright and lively, dry and balanced with pear and light yeast notes - a wine suitable for any occasion.
