Yet another delicious white wine from Gascony. I have said this once and I will say it again: Gascony is underlooked next to Bordeaux for highly flavorful white wines. Domaine de Pajot is located on higher ground overlooking Eauze, a town in Gascony that is the capital of Armagnac! Third-generation owner Damien Barreau and his son, Clement, harvest the grapes by hand and do not use any chemical fertilizers or pesticides in the vineyard. Moreover, the estate is also certified organic. This Cotes de Gascogne wine is a blend of sauvignon blanc, colombard, ugni blanc, and gros manseng and drinks incredibly light on the palate. Expect ripe fruit flavors of kiwi, mango, peach, nectarine, green apple, pear and brilliant wet-stone minerality.

Colombard

Colombard was traditionally used, with Ugni Blanc and Folle Blanche, to make cognac. It fell out of fashion in France in the 1970s, but at the same time caught on in California, and soon became the most widely planted grape in the state (where it was known as French Colombard). There, it was widely used to produce sweet yet crisp bulk wines. Seeing what the Americans had done, the French would soon welcome the grape back into the fold, taking advantage of California's advances in winemaking...
