From old vines of Mauzac, this sparkling white is an old style of gaillacois wine that is partially fermented in bottle. The initial fermentation is stopped by chilling the wine, then it is bottled, and the fermentation completes inside. This creates a lovely sparkling white that is bright and lively. Pair this dry wine with panisse.

Mauzac

Though unknown to most US consumers, this white grape is considered an essential part of winemaking in southwest France, particularly in the regions of Gaillac and Limoux. Here, the sparkling wines (often blends of Mauzac and other white grapes) are made by the rustic méthode ancestrale; they're sometimes sweet, and always a pleasure before dinner or with shellfish.
