A dry white wine made from Grolleau Gris, Baptiste Cousin offers an intense take on this grape often used to make rosés. All grapes are hand-harvested, and are pressed into a large oak vat when spontaneous fermentation occurs. Malolactic fermentation occurs in fiberglass tank, and this racked twice and bottled unfined, unfiltered, and without SO2. Pair with chicken pithiviers.
