A bold and structured Cinsault from the Itata region of Southern Chile, the vines are up to 80 years old. The soils are granite, and half of the wine is foot-trodden. The other half is hand de-stemmed using a zaranda. It is fermented in open top wooden tanks, and aged in cement. Black fruit, earth, pepper, and spice meld with mediuim body and structure. This is a wine for the table, to pair with rabbit stew.
