A blend of Salamino di Santa Croce, Sorbara, and Pignolesco, all varieties indigenous to Lambrusco, who are co-fermented. The name of the wine refers to the lack of temperature control while bottle fermenting in the cellar. Complex, with citrus, stone fruits, herbaceousness, racy acidity, and a spice component, the wine shows through the fine bubbles. Absolutely a sparkler for the table. Serve with chestnut flour pasta and pancetta.

An autoclave is a tank that industrial wine Lambrusco wineries use for the second fermentation of their wines. In Lambrusco, there is a movement amongst natural winemakers called “No Autoclave”. It is also the name of the wine in these bottles. Gianluca Bergianti is the vigneron behind the wine. His wines are the result of his obsession to harmonize with his land. He adheres to the rules of biodynamics. He promotes biodiversity, growing grains, vegetables, fruits, and herbs. Nothing is added to the wines. Bottle fermentation happens with the remaining yeast in the must. It’s a natural wine that drinks cleaner than any industrial sparkling wine. This wine sings with fresh acidity and the minerality of river stones. There is cherry and plum fruit which mix with a hint of herbs. A dose of white pignoletto gives the wine pinpoint precision.
