Julien Thurel is making some of the most vinous, complex, and structured cider in France. He learned cidermaking in Brittany and started his own project with just a hectare of orchards in the Loire. The Solstice was cider that was fermented old casks from Sancerre. The cider was aged for a year in bottle before release.

Julien Thurel is undertaking the project of resurrecting cider production in the Loire Valley, more known for its ever growing natural wine scene. Originally learning cidermaking from Brittany in Normandie, Thurel works with a small hectare of certified organic orchards of apples and pears for his cider releases, though he works towards having more orchards under his care in the next decade that he is planting himself. All fruit is harvested by hand and undergoes a long 6 to 8-month fermentation with native yeasts in old oak barrels. Released undisgorged with the intention for the bottles to remain fresher for longer, the Solstice is an extra brut cider with a thick leesy and creamy texture, with flavors of star anise, autumn leaves, baked apples, and clover honey that just really show Thurel's exciting potential coming to fruition.
