Sometimes you need a reason to celebrate, and sometimes you just need to celebrate your own existence. These days I am celebrating the latter. If you have never had the Champagnes of Eric Rodez, they are absolutely perfect for both! This is a rich, powerful Champagne, with just the right amount of oak influence. Red fruits, toast, spice, and both malic and lactic acid really let this Champagne explode with flavor. This is suitable for a host of different dishes, and I would highly encourage its consumption at the table. It is as food-friendly as red Burgundy, and for the quality it is quite a steal.
