This enticing Carricante comes from ungrafted old vines planted on the eastern slopes of Milo. With less than half a hectare of vines alongside the small yields, this bottle is a rarity that will flourish with age. The wine was made in a palmento - an old Sicilian cellar filled with rooms that work with gravity, zero electricity and a set-up that worked for centuries but has long been replaced with modern equipment in most cellars. Salvo Foti, being Salvo Foti, is a preservationist and abides to ancient techniques that have survived for a reason since they have proven functional throughout the decades.
