Nixta Licor de Elote

Item # 42391 750 mL

A spirit that goes at the heart of Mexican cuisine and culture as much as any agave spirit. To create this elote (the beloved sweet, spicy, smoked Mexican street corn staple) liqueur, Abasolo corn spirit is infused with heirloom early harvest tender corn on the cob along with a sweet mash of Cacahuzintle hominy. The sweet corn notes are reminiscent of dried stone fruits, fragrant herbs, roasted acorns, stewed rhubarb, dried chile, condensed coconut milk and vanilla. This is a definite must have permanent addition to your home bar.

Staff Pick Notes

Despite the "corny" (quite literally) design of the bottle, the Nixta Licor de Elote is quite a serious undertaking where this ancestral variety of Cacahuazintle maize undergoes stripping of the juices from its roasted kernels, separated from the cob to instill into a corn distillate. Those dry, roasted kernels are then cooked and roasted again and then ground into a flour that is turned into a sweet wort over several hours of stirring in hot water in stainless steel tanks. This fermentable wort is distilled and incorporated with the Nixta corn distillate. This creates a slightly sweet, textured liqueur with notes of cornmeal, brown sugar, chili powder and with a deep extraction of those cooked corn aromas and flavors.
