Ochota Barrels, "Price of Silence" Gamay - 2022

This is made from the oldest Gamay vines in all of Australia which were planted in 1985. After hand-harvesting, 50% of the fruit was fermented carbonically while the rest was fermented whole cluster. This combination of fermentation techniques makes for a fruited wine yet also structured and with acidity that works at the table.

The high altitude and steep topography of the region exert cooling and humidifying effects, which, along with the highest rainfall in South Australia, contribute to a climate very conducive to leaner, more mineral-driven styles of wine.
