Dry and full-bodied on the palate, this is a more gourmand, sophisticated cider. The apple orchards for this cider live up to 100 years and don't give fruit adequate for their quality until 15 to 20 years of age.

When days are getting longer and the sun is shining higher in the sky, that's the time of the year when the soul is looking for something refreshing and unique, something sophisticated, something unfamiliar, and at the same time easygoing. For me, that's a sparkling Basque cider made with two fermentations in the Champagne Method, the second of which takes place in the bottle. The palate is bright and dominated by grassy, green apple notes. Quite dry and ember colored. All I need now is a patio, cool sunglasses, and a good book. Let the Fiesta begin.
