From one of Australia's up and coming distilleries, Starward is the first whisky producer from this island continent to deliver the goods at a very reasonable value. Based in Melbourne, the team here source barley malt exclusively from Australia and age the Nova expression for a minimum of two years in freshly used Australian red wine casks. Notes include dried figs, mulberry, currants, sliced apple, honey coated cereal. cake frosting, cinnamon and drying spices.

Fixating your eyes on the bottle, you’ll feel as if you’re strapped into a Delorean racing into the future. This expression from Melbourne’s up-and-coming distillery draws inspiration from its local red wines. The Nova is matured for two years in freshly used red wine casks to maintain the wine to oak character while the climate of Australia aids in a rapid aging process. For the profile, the nose is swirling with glazed cinnamon rolls, light red fruits and a soft floral aroma. This taste is of caramelized apples, baking spices with the red wine cask providing subtle tannins, the flavors all speckling like sparks bouncing from a flame. It’s such a delicious, mellow drinking whiskey that represents the best of Australia’s wine and distillation hand in hand.
