Made from a 200 year-old single vineyard with sand and gravel soils, this 100% País is unlike the pedestrian bottlings that abound. The winery does not use machinery, grapes are hand-harvested, and pressed by hand in traditonal zarandas. Fermented in cement, and aged in old wooden barrels, this is a País with a feral touch. Pair this dry red wine with a completo, or pork empanadas.

The Natural Wine frontier is in Chile now, and its aesthetic is slowly transforming what was once a very industrial wine producing country. País has been trumpeted as the Chilean Gamay, but it can make a couple of different styles of wine. Here because of very old vines and some used oak wood aging, the palette is a bit more broad and structured than I was expecting. A very aromatic nose of wild brush and eucalyptus really drew me in and keeps me coming back for more. The fruit is dark and intense, the tannins add structure, and the finish is smooth and dry. A wonderful pairing with fresh ripe goat's milk cheese.
