Climate change has had such a profound effect on wine production and style, we've had to change our baseline expectations when it comes to certain wine regions. Cooler climates are no longer reliably cool, riper fruit is more common than not. In Burgundy, anything goes. After a string of warm seasons, 2021 went old school with a lot of cold wet weather. Sunshine in the fall saved what little survived, but it was a challenging year. Careful winemaking is the key. Brian Sieve at Domaine de Montille was patient, waiting until the grapes reached full ripeness then fermented whole bunches for a less rustic more elegant style. You'll find a core of fresh cherry, leather and forest floor and fine tannins. Approachable now but will definitely improve with age.
