This farm to glass distillery on Islay is really coming of age and they are set to become icons of the industry with their old school tried and true, sustainable methods. The increased complexity from the earlier bottlings is palpable with pronounced notes of stewed stone fruits and berries, smoked cherry wood, rich vanilla, saltwater taffy and simmering peat flavors. Made from 50ppm peated barley, the whisky was aged for over 8 years in 80% sherry casks and 20% bourbon barrels.

Kilchoman opened it's doors in 2005 as the first new distillery on Islay in nearly a decade. Over the past decade they have been widely and steadily awarded for consistency and quality. From their core lineup, my favorite for an evening dram is without a doubt 'Sanaig'. Named after a rugged coastal inlet north of the distillery, this is a fitting nod to the peat-moss smoke character that is integral to Islay whiskey. Peated to a very familiar 50ppm, the smoke presents as inviting, dusty chimney smoke. But the real character of this whiskey comes to light with the uniquely rich 70% portion of Sherry aged malt. The sip is rich and satisfy with a perfect balance of oak and smoke. If you haven't tried Kilchoman yet, get yourself a dram!

History:Distillation was brought to Scotland from Ireland by missionary monks in the 6th century. In 1644, the first taxes were imposed on Scottish distillers by England, with the result that most of the nation’s whisky was soon distilled illicitly. With the Parliament’s passing of the “Excise Act” in 1824, licensing fees for distilleries were much cheaper.
