On the very Western edge of Naples lies the Campi Flegrei, a volcanic area marked by its large craters and proximity to the Tyrrhenian Sea. Wine production has existed here since Roman times, with the majority of vines planted in steep terraces. The soils are purely volcanic and this produces this focused, mineral driven, dry white wine. Pair with braised octopus.

Campania consistently makes my favorite Italian whites. The "Agnanum" is named for the volcanic crater where the vineyards lie, full up with black sand and steeply terraced vines. Work is done by hand on the 10ha estate: mechanization would be impossible. This is an ancient wine region, and the youngest vines for this bottle are 60 years old, the oldest past 200 years. The effect on the concentration and complexity in the fruit cannot be overstated. Winemaker Raffaelle Moccia uses native yeasts for fermentation in stainless steel and adds 10mg of sulfur at the start and none at bottling. Powerful and exotic yet crisp and balanced, with citrus blossom and lingering aromas of volcanic minerals and smoke. It's not light-bodied, but never feels fat or overwhelming. Try it with tacos al pastor or scallops in a summer fruit salsa.

A white variety cultivated in Italy's Campania region. It is believed to be an ingredient in the legendary Falernian, the wine of the ancient emperors. Today, it produces flavorful, fragrant wines, often having crisp apple and citrus flavors.
