The wild Cenizo agave that grows in Durango is different from the ones you would see in Oaxaca. Here the plants grow tough, large protective fibrous pencas that allow them the nearly decade and a half it takes to mature in the rugged enviornment of the Durango plateaus. Production here at the family run Rancho El Oro distillery follows traditional protocols with a manual harvest of the ripe plants followed by slow cooking, tahona crushing, wild yeast fermentation in open air oak vessels and double distillation to proof in small pot stills. The mezcal is deceptively subtle on the nose with elegant notes of lime blossoms, white peach, minerals and pepper while the palate bursts with juicy flavors of green melons, plantains, coconut and fresh herbs. A magical mezcal that has an ease and effortlessness to it that belies that tremendous time and labor it took to produce this singular small batch of 711 bottles.

Something that makes Mezcal such an exciting category is it's diversity: that no matter how far you delve in, there's always something you haven't tried. A new style, a new place, a new agave. This bottle, 100% wild agave Cenizo, comes not from Oaxaca, but from Durango far to the north. A project of Casa Cortes (the family behind El Jolgorio, Nuestra Soledad, and Agave de Cortes) working with the Saravia family in Durango, Origen Raiz is about local varieties of agave using completely old school and natural production, for true expression of terroir: wood-fired pit oven, mule-drawn tahona, and spontaneous fermentation in open-topped Red Oak vats. The palate is cane, papaya, and melon fruits, celery salt, lime zest and lime blossom, with a long lingering bass note of smoke running underneath it all.
