The base wine aged for a year in foudres before bottling for the second fermentation. After 2 years sur lattes, the wine was disgorged. This is the quintessential sparkling wine for oysters and pâté. It's dry on the palate with a fragrant aromas and a fine bead you can only attain through the Champagne Method of two fermentations.

If you're familiar with Jura wines at all, then you know that the name Tissot is wine royalty. The family, however, not only has deep roots, but many branches so it can be hard to keep track of them all. But just know that when a Tissot is making the wine you're in for something special. Valerie and her brother Jean-Christophe oversee this Domaine, which has 15 ha throughout the region. This bottling is 100% Chardonnay and is crémant at its finest: bright, dry, a little toasty, saline with hints of green apple and wet stone. Aging the still wine for a year in large neutral barrels and another 2 years in bottles sur lattes gives the wine some extra texture and depth. Pair with oysters, smoked fish or even caviar and treat yourself royally.
