From a solera that is now in its eighth decade, this elegant dessert Sherry has a dark amber hue, with flavors of crème brûlée, marmalade, and toasted hazelnuts. Not nearly as syrupy as might be expected, it finishes long and clean. Wonderful when slightly chilled, either with rich desserts or on its own.

El Maestro Sierra is the crown jewel of sherry in Jerez with roots dating back to 1832. Cooper Jose Antonio Sierra set out to create the best sherries possible but was shunned by the nobility who dominated the business. He later became one of the top almacenistas/stockholders of high-quality sherry, which he would playfully joke about on his labels with hunters (nobles) chasing down a fox (his winery). Sales never took off which left stocks untouched for more than 30 years in soleras from 60 to 100 years old. This PX spends 15 years in the solera system, giving it potent sweetness, depth and complexity. Gingerbread, brown sugar, figs and caramel allure the nose while a decadent mix of vanilla, pecan, and prunes are a perfect match for pumpkin pie and crème brulee.

Jerez

Sherry actually gets its name from our anglo-inability to pronounce the word “Jerez,” the town at the southern end of Spain in which the wine is produced. Like Champagne, Sherry can only be called Sherry if it comes from this specific region. That said, there are other “Sherry-styled” wines worthy of note produced outside of the Sherry D.O. (known as vinos generosos). Montilla, lying to the north-east of Jerez, produces some of the finest Pedro Ximénez in the world.

Also known as PX (thankfully to those of us who have a dislike of words that begin with x’s), this dessert-style fortified wine is made entirely from the highly-sugared Pedro Ximénez grapes. Many of the best examples come from the region of Montilla, and are thus not technically classified as Sherries.
