Meinklang is one of the *extremely* natural winemakers: certified biodynamic, ceramic eggs, vegan, wild yeasts and little-to-no sulfur, the whole thing. Their vineyards look more like fields of wildflowers than neatly rowed agricultural plots, with insect hotels, fruit trees, and families of wild birds nestled in among the vines. This is a wild, single vineyard pet-nat that they've started making and it is crazy good. From 100% Pinot Gris, the natural fermentation means each vintage is unique--2015 came out in a very dry style and shows upfront, ultra-drinkable notes of apricots, passion fruit, and cider. Showing a bit of tannin, the 'Foam' will pair well with all manner of pork, with goat cheese tarts, avocado salad, and celery root schnitzel. Enjoy!
