Crisp, tart, mineral. That spine tingling acidity. Yes this Chablis has all of the signature traits of a such a well defined style, but it also has this shimmering energy which makes it an absolute knock out. It's somewhere between the sensation of biting directly into a lemon rind and the coolness of a stream of fresh water. This small estate is one of the few in the region that still value hands on farming on organic vineyards. Passionate wine maker Stéphane Moreau took over the family business in 1999 and completely modernized their offerings. Sadly he passed away a few years ago at a young age. His wife Virginie has carried on his vision since 2016 and they continue to produce some of the more unique wines in the area. This Chablis AOC sees a small amount of new oak, which amplifies those glowing highs.
