Made by smoking the casks with the distillery's local peat, this is a singular whisky that is clearly a standout in the smoky spirits category. Aged in all ex-sherry casks, the distillery ingeniously employs used fino, oloroso and pedro ximenez wood for the six plus years of maturation. The notes here evoke a bonfire of autumn leaves, moss, bark, dark chocolate, macadamia, brisket, saddle, dry rub spices, caramel cone and a hint of Lapsang tea.
