More is not always better. I know this is borderline blasphemous in America, but hear me out. Were those four cheese nachos really that good? Did you use that extra dipping sauce? Glad they were double fried? If the answer to any of these questions was “hell no!” then you know what I’m talking about. There’s a wonderful satisfaction in having just enough, which is what this champagne is all about. Judicious servings of citrus, toasty bread, a touch of cream, and sculpted minerals. The tiny bead makes for a crunchy texture and a nose-tickling aroma. There is time for sauce and excess, but sometimes “just enough” is all you want.
