From a phenomenal new distillery run by father-and-son team Peter and Geoff Dillon, whose combined experience as biologists, chemists, economists, and naturalists is impressive enough; their first-release of gin took our breath away. Made with a base of local Niagara grapes, the 22 botanicals for the proprietary recipe are vapor-distilled and the final spirit is left unfiltered and slightly cloudy for maximum flavor. Notes include lemon, cardamom, coriander, black peppercorn, flower petals, and more, all rounded out by the medium-weight, silken texture.
