Barolo is a mix of pleasure and restraint, intriguing for its complexity and heartiness, and able to age for several decades. Mysterious because the scents and tastes of its evolution evade those who cannot resist opening a bottle now. It bears keeping in mind that there is no right or wrong way to enjoy wine. If you appreciate the aroma of deeply scented red roses, forest air, and hints of cedar and cherry, then now is the time to decant this bottle. If you prefer the aromas of dried flower and leather and softened tannin, put a few bottles in the cellar. Perhaps for a decade or three. Pair with meaty pasta, aged cheese, mushrooms, and truffle. .
