The magician of the Tarn, Laurent Cazotte has a way of coaxing a staggering amount of complexities and subtleties out of his world-renowned organic range of eau de vies and liqueurs. The walnut liqueur follows a similarly complex production process as his other spirits. A base of Folle Noire wine is infused for a year and a half with fresh green walnuts grown organically on the family farm. After the infusion the liquid is racked to collect the pomace, which is then pressed and re-distilled to create the walnut eau de vie. The eau de vie is re-blended with the infused wine and put into a single oak cask. Bottling is done to order with never more than a third of the casks contents being emptied at once. Notes include dried plums, raisins, licorice, pine needles, buckwheat honey, Sherry, molasses, pomegranate, mandarin orange, kola nut, raw vanilla, quinine, and much more.
